Goals by Kieran Bishop (42′ and 90′) and Adeyinka Cole (pen 47′) secured all three points.
Billy Holland (63′) scored for Sudbury.
The result leaves Grays Athletic in 10th place, six points off the play off places.
They return to league action on Saturday away at Haringey Borough.
