PATTISSERIE students from South Essex College created amazing assignment work using sugar craft and chocolate.
The Level 3 Patisserie and Confectionery students, who all study at the College’s Thurrock Campus, were tasked with creating a display for their assignment using chocolate, sugar craft and pastillage, a type of gum paste icing.
Student Kelly Graham-Smallwood put together a skull design made from sugar and pulled sugar flowers, the skulls were cast from white chocolate and then hand painted and finished with coloured royal icing.
Anita Banga’s afternoon tea creation was made from a base of sugar and the individual items produced from Pastillage. Everything was airbrushed or hand painted and finished with royal icing.
Sasha Crossley, Course Team Leader, said: “All the display items were great but the pieces produced by Kelly and Anita in particular were outstanding. The attention to detail was superb.”
